Build Your Own HACCP allows hospitality businesses to build their own HACCP file from a range of Safe Methods templates. This helps tailor the HACCP assessment to the business, ensuring appropriate documentation. Designed using the simplified version of HACCP that is advocated by the Food Standards Agency for businesses catering direct to consumers, the safe methods are in line with UK Hospitality guidance. These documents help businesses meet the UK legal requirement for a documented food safety management system based on HACCP principles.
Each card starts with a risk assessment, detailing the hazards associated with the individual task - what can go wrong. For example, in food storage this could be the growth of harmful bacteria.
Next the card sets out the standard safe methods of controlling the hazard, as recommended in UK guidance. In our example, one control would be to store food at an appropriate temperature - at 8C or lower for fridges. The standard safe methods set out multiple controls for the hazards associated with the activity. Where these may be the ideal, your business circumstances may mean that you have different or additional ways of controlling the hazards. You can write these in the space provided for alternative safe methods.
With every effort to control the hazards, there will still be occasions when things don't go as planned! That's why we detail what to do if something is wrong. In our fridge storage example, there may be a breakdown resulting in food being stored at too high a temperature. This section explains how long food can be outside of the required temperature and what you must then do to put things right - corrective actions.
The templates then provide options to explain how this is all documented in line with UK food safety requirements. Our records provide a checklist of possible ways of recording your actions, with links embedded into the PDF file to recommended templates. Simply tick what you do, or write an alternative in the space provided. In our fridge storage example, you may record equipment temperatures in a food hygiene diary or another document.
Finally, there is a table to record the staff members that have been trained in these safe methods. Using the cards as an integrated training record ensures all of the team are managing food safety using methods your business has approved.
Each template is sold as a PDF file, allowing businesses to print as required and store together in their own HACCP file.
