Caterers Choice Food Safety provide food safety services designed and priced for small businesses. Audits are available to all businesses, whether operating a CCFS food safety management system or not. As we use the same scoring framework as food hygiene ratings, they are great preparation!
Your business will receive its food safety audit from a fully qualified environmental health practitioner. Businesses can choose to receive their audit by appointment, or our auditor can visit at an unspecified date and time within opening hours. This allows the auditor to see the business in full operation as a local authority EHO will. On arrival, the auditor will follow the CCFS audit plan, allowing an assessment of the food safety criteria that local authorities expect to be met. We encourage food business operators to accompany the auditor around the premises, but this is not essential. The auditor will talk to staff and management to aid their assessment of the systems in place. Following the premises assessment, the auditor will review HACCP documentation if available. The audit takes 1-2 hours, dependent on the business size and practices. Initial feedback will be given to the manager at the time of the audit. A full report in PDF format will be available within 7 days of the premises visit.
Our reports are not designed to be a list of problems for the food business to sort out. They will include details of where practices can be improved, but also highlight where good practice is already being followed. This encourages staff to continue doing what they do well and removes the negative feelings around being assessed. The report will summarise the same three key areas as your local authority EHO when assessing your food hygiene rating, and estimate your rating using the relevant guidance. The key areas are:
Hygienic food handling.
Hygienic handling of food including preparation, cooking, re-heating, cooling and storage.
Cleanliness and condition of facilities and building.
Cleanliness and condition of facilities and building (including having appropriate layout, ventilation, hand washing facilities and pest control) to enable good food hygiene.
Management of food safety.
System or checks in place to ensure that food sold or served is safe to eat, evidence that staff know about food safety, and the food safety officer has confidence that standards will be maintained in future.
All businesses will receive an estimate of their potential food hygiene rating, calculated using the relevant local authority guidance. Scores are subjective and dependent on the conditions witnessed during the visit, but can provide a valuable insight as to what can be expected from a local authority visit.
Audit prices are determined by the type and size of the business, and location relative to the nearest CCFS auditor. A reduced fee is charged for businesses using our FSMSs, as this simplifies the audit process.
