In terms of legal compliance, there are no specific courses that catering staff are required to take. It is generally thought that a Food Hygiene Level 2 certificate is an acceptable level of training for a kitchen team member without managerial responsibilities, but this is not required legally. UK law simply requires all food handling staff to be trained to carry out their duties. For example, if you have a member of the team that washes crockery and cleans, there is no legal requirement to teach them how to cook safely.
The CCFS staff training is adapted from the FSA publication 'Safer Food, Better Business'. For businesses adopting one of our complete food safety management systems, this training record will also signpost users to where they can find the information required to learn. For most training areas this will be the relevant section in the user manual or food hygiene diary. There is also addition space to record extra training, such as NVQs.
