Unfortunately, we can't just write a management system, assume it will work, and let it run unchecked. An important part of HACCP is verifying the processes we put in place actually work. A way to ensure staff are following the safe methods prescribed, and standards are maintained, is through senior management audits. Senior management will mean different people to different organisations. For a chain of pubs, it could be the area manager, or for a small restaurant it could be the restaurant general manager. It doesn't even need to be someone higher up the managerial hierarchy than the kitchen staff, but it is important they are not involved in the day to day running of the kitchen. Those working in the kitchen every day are more likely to overlook difficiencies.
